Refreshing beverages for summertime

Summer will be here before you know it. Get ready for the season with these tasty recipes for some refreshing summer cocktails, provided by www.delish.com.

Orange Splash

• 2 oz. Absolut Citron Vodka
• 1 oz. Cointreau or triple sec
• 1 splash each of fresh lime juice and orange juice
• Sugar
• Orange slices

Pour all ingredients over ice into a large glass or shaker. Shake well, pour into a sugar-rimmed glass and serve with orange slice garnish.

Mango Peach Fizz

• 1 ripe mango
• 1 large ripe peach
• ½ cup unsweetened mango, orange or peach juice
• 1 tablespoon sugar
• Peach schnapps
• Cold club soda, seltzer or champagne

Puree both fruits in a blender. Add sugar and your choice of fruit juice, then blend. Pour mixture into glasses with peach schnapps, then top with club soda, seltzer or champagne.

Fresh Mint Margaritas

• 1½  cup of good quality tequila (cheaper tequila is not recommended for this recipe)
• ½ tablespoon kosher salt
• 4 cups crushed ice
• 1 cup fresh squeezed lime juice (requires approximately 8 limes)
• ½ cup chopped mint leaves
• 1 cup triple sec

Place mint and salt in a large pitcher. Crush with a wooden spoon. Add other ingredients, stir vigorously and serve in wine glasses or short tumblers.

White Wine Sangria

• 1 pint strawberries
• 2 oranges
• 2 lemons
• 3 peaches
• 3 bottles white wine
• 1 liter sparkling water
• Ice

Place all fruit in a large bowl or pitcher, add wine and leave at room temperature for 24 hours. Add sparkling water and ice when ready to serve.
