Mimosas are an excellent celebratory beverage for graduations, weddings, or an upscale brunch. The original mimosa incorporates your favorite champagne, orange juice, and triple sec. Pineapple Mimosa

It’s as refreshing as it sounds, but with an extra layer of flavor. Always choose top-shelf vodka for your mimosas, but for this recipe, use a pineapple-infused vodka. Add just a little bit of high-quality orange juice. Additional ingredients include lemon juice and honey, topped with Prosecco. Garnish each glass with an orange peel for a fancy touch.

Bellini

Ask most mimosa lovers, and they probably associate the drink with an orange or citrus flavor. But, the Bellini is a sparkling wine cocktail made with fresh peach juice. You can use champagne or Prosecco, although any sparkling wine will excite your taste buds. Start by making a peach puree using four peaches pitted and quartered. Add to a blender with ice, lemon juice, and sugar (or simple syrup), and then blend well. To assemble the cocktail, mix two ounces of peach puree, four ounces of sparkling wine, mix well, and garnish the glass with a peach slice. Experiment with different varieties of peaches to find your favorite.

St. Germain Cocktail

Before we usher in fall and see the last of the blooms, this St. Germain cocktail will leave a bit of summer on your taste buds. This cocktail mixes two ounces of St. Germain liqueur with three and a half ounces of sparkling wine. Garnish the glass with a lemon peel, although strawberries or raspberries are excellent for adding floral colors. There’s even a non-alcoholic version that substitutes the St. Germain with two ounces of elderflower concentrate mixed with sparkling water.
